1/2 Tsp. Salt
80 ml Heavy Cream
40 g Butter
2 Tbsp. Milk
To taste Salt & Pepper

Peel and cut potatoes in to chunks. Cook them in a pot with cold water over medium high heat on the stove.

Meanwhile warm up heavy cream, butter and milk in a saucepan on the stove or using microwave.

When a fork can easily poke through the potatoes, they are done. Drain away the water. Mash the potatoes using a potato ricer or a potato masher. If you don’t have those, a fork will work too.

Then use a spoon to beat the mashed potato while adding in cream butter mixture. Beat just until smooth and well mixed. Do not over beat as the starch in potatoes will get more gluey.

Add salt and pepper to taste. Decorate with chopped spring onion. Serve.
