Ingredients

Adjust Servings:
400 g Spareribs
2 Tsp. Sugar
1 1/2 Tsp. Salt
1 Tbsp. Shaoxing Wine
1 Tsp. Sesame Oil
1 Pinch White Pepper Powder
2 Tbsp. Cornstarch
1 Tbsp. Water
5 pcs Cili Padi; chopped
1 Tbsp. Chinese fermented black beans

Marinade

In a bowl, marinate the pork ribs with sugar, salt, wine, sesame oil and white pepper. Mix until the ribs are coated well. Cover and set aside for at least 30 minutes or leave in the fridge overnight.

Steam Pork

Add cornstarch and water to the marinated ribs and mix well. Adding cornstarch will soak up the liquid/marinade in the pork ribs bowl.

Bring a wok with a metal steam rack over the stove. Add water and bring it to a simmer. Place ribs on a plate for steaming. Sprinkle chopped cili padi and rinsed fermented black beans over the top.

When the water is simmering, place the plate on the rack and cover the wok. Steam for 10 minutes or until the ribs are cooked through.

Plating and Serving

Serve hot with bowl of rice. Or simply eat with other dim sum servings.
