Make DoughIn a bowl, sift cake flour, corn starch and milk powder. Mix well with a whisk and set aside. In a large bowl, cream butter, sugar and cream cheese together. Add in dairy cream and beat till well mixed for 10 mins. Add egg yolks all at one and beat for another minute. Pour in half the sifted dry ingredients into butter mixture. Mix till well combined and add the remaining half. Beat till all the flour are well incorporated. Mix by hands if your mixer can’t handle the amount of dough. Let dough sit for 10 minutes before rolling them. |

Shape Tarts and GlazeWeigh out 11 g of dough balls till all the dough are done. Then weigh 7 g of pineapple jam balls till all jams are done. To make the pineapple tarts, flatten a piece of dough on the palm and place one jam ball in the middle. Fold in the sides of the dough to cover the jam fully. Repeat till all the dough and jams are done. You may use a knife to score shapes on the balls to make it look like pineapples. Skip this if the looks does not matter. Beat one yolk and glaze them on each piece of pineapple tart balls. |

Bake GoodiesBake in a preheated oven at 160 degree C for 20 mins. Cool on the racks before popping them in your mouth. They are hot! Serve or store them in containers. |
