500 g Prawn; large

1 Shallot; finely chopped

2 cloves Garlic; minced

1 Red Chili; finely chopped

1 stalk Spring Onion; slice thinly, separate green and white

50 g Ketchup

10 g Oyster Sauce

1/2 Tbsp. Worcestershire Sauce

1/2 Tsp. Sugar

Wash and pat dry the prawns. Trim prawns and remove intestine. Leave the shells on. In a bowl, mix ketchup, oyster sauce, Worcestershire sauce and sugar. Set aside. Heat up wok on high and put in 2 Tbsp of oil. Put in a few prawns and give the prawns a quick sear on both sides about 5 to 10 sec on each side. Dish up and set aside. Do the same with the remaining prawns. Add abit more oil to the wok to about 2 tbsp. Cook garlic and shallots until fragrant. Add red chili and white parts of the spring onion. Cook until fragrant. Return prawns to wok and put in sauce mixture. Stir and cook until the gravy coats the prawn well. Put in green parts of spring onion. Stir and dish up. Serve hot. |
