Put soy sauce, mirin, dashi and sugar into a pan. Stir to combine and sugar melts. Remove bones from chicken and cut them into bite size pieces. Add to the same pan. Slice onion into long strips and add to the pan.Bring the pan over medium heat to cook. Meanwhile break eggs into a bowl. Lightly break the yolk with a fork. When chicken pieces cooked through, pour in the eggs covering the surface of sauce and meat. Cover pan with a lid and let simmer till eggs are slightly cooked. Use pasteurized eggs if you are not sure the eggs are safe to consume raw or fully cook the eggs. Serve on a prepared bowl of cooked rice. Garnish with thinly chopped spring onions. |
