Crispy Garlic GarnishIn a wok over medium low heat, heat up a 2 tbsp of oil. Add sliced garlic. Slowly let it get brown and crispy. Set aside crispy garlic for garnishing and leave oil in the wok. |

Fry eggLightly beat eggs in a bowl. Heat up the wok again. Top up oil in the wok if it is less than 2 tablespoon. Put in egg and stir around to cook. Break up eggs into a lot smaller pieces. Dish up. |

Ready to fry rice and ServeIn the same wok over medium high heat, add 3 tablespoon oil. Add minced garlic. Fry till they are fragrant and almost brown. Add cooked rice, eggs, soy sauce, mirin, sugar and sesame oil. Stir to mix well and break up lumps of rice. Add spring onion and do a few quick stir. Taste and adjust with salt and pepper to taste. Dish up and garnish with crispy garlic slices and some spring onion. |
