Crispy SkinPlace a frying pan over high heat. Add some oil. Once hot, lower to medium heat. Place chicken fillets skin side down on the pan. Season with salt and pepper. Cover with a piece of aluminium foil. Let it cook for 5-6 mins. When skin is crispy, turn the fillets around. Drizzle in the sake. Cover with foil again for another minute or till chicken cook completely. |

SauceAdd teriyaki sauce. Swirl the pan to coat the chicken pieces without touching the skin. Skin soaked in liquid wont be crispy anymore. Dish up. Serve whole or cut to bite size pieces with sauce. |
