Ingredients

Adjust Servings:
6 pcs Chicken Drumstick; skinless
1/2 cup Rice; jasmine & calrose
10 cups Water
To Taste Salt
2 Stalks Spring Onion; chopped thinly
1/2 inch Ginger; thin shreds
To Taste Sesame Oil
To Taste White pepper
To Taste Light Soy Sauce

    Making Porridge

    Wash the rice and soak them in 2 bowls of water. Let it sit for at least 1 hour.

    Blanch the chicken in some boiling water, remove immediately as soon as skin starts to turn white. Remove the skin and set aside.

    In a pot, put in the rice (remove soak water), 6 bowls of water and drumsticks. Bring them to a boil and then turn it to medium low heat. Total cooking time should be around 1 to 1.5 hours. Check on them constantly. Stir once awhile. When the congee has reached the consistency you desire, add a pinch of salt.

    Plating and Serving

    Serve hot congee in a bowl together with some green onions, ginger, sesame oil, white pepper and light soy sauce on the side.
