In a saucepan, heat up the milk over medium heat until you see bubbles forming on the top. In a another saucepan, melt the butter over medium heat. Slowly add the flour over the top, stirring constantly until a thick paste forms. About 1 to 2 minutes. Slowly pour the warm milk to the flour paste in a steady stream, whisking constantly. Continue cooking and whisking constantly until the mixture thickens. About 5 minutes. It should be thick but pourable. Add grated cheese, whisking constantly until it is melted. Add hot sauce and cayenne pepper. Adjust taste accordingly with salt and pepper. Serve hot. Sauce will thicken upon cooling. |
