2 Egg
3 Tbsp. Caster Sugar
2 Cups Buttermilk
1/3 Cups Vegetable Oil
1 Tbsp. Vanilla Extract
1 1/2 Cup Flour
1/2 Cup Cornstarch
1 Tbsp. Baking powder
1/2 Tsp. Salt

    Make Waffle

    Preheat the waffle maker. Best to use a flip waffle make for a more evenly cooked waffle.

    Separate the yolks and whites. In a bowl, whisk together egg yolks, buttermilk, oil and vanilla extract.

    In another bowl, combine flour, cornstarch, baking powder and salt with a whisk.

    In a large bowl, beat the egg whites with a hand mixer till foamy. Add in sugar and continue beating till stiff peaks.

    Add buttermilk mixture to the flour mixture. Stir to combine with a whisk. Do not over stir. It is fine if there are lumps in the batter.

    Using a rubber spatula, fold in beaten egg whites. Slowly and carefully not to deflate them. Air bubbles are your friends.

    Pour the batter into the waffle maker and cook according to your waffle maker instruction.

    Plating and Serving

    Serve hot with butter and drizzles of maple syrup. Or just scoops of ICE CREAM!!
