Ingredients

Adjust Servings:
700 g Chicken; chopped
6 pcs Dried Shiitake Mushroom; soaked to soften
30 g Ginger; sliced thinly
2 cloves Garlic; minced
1 Tbsp Vegetable Oil
1 Tbsp Sesame Oil
Seasoning Sauce
1 Tbsp Dark Soy Sauce
1/2 Tbsp Soy Sauce
1/2 Tbsp Shaoxing Wine
1/2 cup Reserved Water from soaking mushroom
1/4 tsp Salt
Thickening
1 tsp + 1 tbsp Corn Starch + Water

Preparation

Trim stems off softened mushrooms. Set aside.
Reserve 1/2 cup of the soaking liquid.

Heat up vegetable oil and sesame oil in a wok. Fry ginger and garlic till fragrant. Add chicken.

Let chicken cook till half cooked through. Add Dark Soy Sauce. Stir to coat all chicken pieces.

Add the reserved liquid and all other seasoning ingredients. Cover wok and allow to simmer for 20 mins over low heat. Stir occasionally.

Add thickener mixture while stirring to mix well.

Dish up and serve. Enjoy!

Best eaten with warm white rice.
