Ingredients

Adjust Servings:
2 kg Pig Trotter/Knuckles; chopped
150 g Old Ginger; skin off, bruised
150 g Young Ginger; skin off, bruised
200 ml Black Vinegar
200 ml Sweetened Black Vinegar
60 g Brown Sugar
1/4 cup Sesame Oil
500ml Water
3/4 Tbsp. Salt

    Blanch trotters in boiling water for 5 minutes. Rinse and wash away scums. Set aside.

    Bring a pot over medium heat. When it is hot, add sesame oil and ginger. Fry till fragrant. Add trotters and fry till they dry a little and smell fragrant.

    Add brown sugar and stir till melt. Add water and bring to a boil. Once boiling, change to medium low fire and cook for 30 minutes.

    Add salt and vinegar. Taste and adjust salt, sugar and vinegar accordingly. Continue boiling for another 30 minutes. Pork should be falling off the bones or continue to cook a bit longer.

    Bring them off the heat and let sit for 2 hours or overnight for better taste. Longer the better.

    Serve with rice.
